Can I bake in steam table trays?
I just bought a bunch of steam table trays to use when catering BBQs for friends. I’m thinking of doing a bunch of scalloped potatoes or Mac & Cheese trays. Is there any reason that I can’t use the trays I bought for baking? They are pretty “heavy-duty” and stainless steel and seem no different than your average baking pan.
Steam table pans are workhorses of foodservice kitchens. And operators’ options for the pans are almost as abundant as the foods the pans can hold. Traditional stainless steel pans have long dominated the market.
